Kale is one of my favorite foods of all time and this is such an awesome quick way to use it.
Marinated Kale Salad
1 bunch kale, greens ripped off stems
Shitake mushrooms, I use 5 handfuls more or less
Small tomatoes, a cup or so
Half a shallot roughly chopped
6 chopped dried figs
Extra Virgin Olive oil
Assembly: I pour a bunch of olive oil on the kale leaves and massage it for a bit to soften up the kale, then add the mushrooms, tomotoes, and shallot, pour a tablespoon or so of balsalmic on there, salt and pepper, then finally the figs and blend it all with my hands. Then the longer it marinates, the better….enjoy.
